[Japan] What is the difference between Karaage and Tatsuta Age?
I thought they were one in the same?

I didn't care the difference before, lol.
But one source says that tstsuta age is a sort of karaage, but specifically the one flavored with soy sauce or something before frying it.

The powder is different.
Tatsuta age:
Marinade the meat/fish beforehand, typically; and coat the meat/fish with startch-based powder (片栗粉, Katakuri-ko), and then fry. Starch makes it more crunchy.
Kara age:
It's usually coat the meat/fish with flour, or flour-based mix powder.
Marinading is not always requiered.
