What will I serve for lunch?

I have to provide a light lunch for ten. I need to be able to get it out after a session without much preparation time, and would prefer something cold.

I'd serve like a salad, a decent one, and maybe some type of sandwich on GOOD bread. Even the salad could be cold pasta of some kind. Good luck, I serve 14 everyday and it's always work trying to figure out what to feed them. You could even go for soup and sandwiches. People like that too.

I always like to give them finger food..

    1) Tuna cucumber cups - Mix mayo and tuna and some salt and pepper and stuff them into tuna cups. Or even on Ritz crackers.

    2) Tomato bruschetta - Pre-sliced mini-toast topped with chopped tomatoes, sweet onions, basil and olive oil. Or to make life easier, buy pre-made pico de gallo and add chopped basil and you're good to go.

    3) Shrimp cocktail - Easily available from the store.

    4) Ham & pineapple sticks - Get some cube ham, alternate them on a stick with pineapple and serve!

You can make all of these overnight.. Good luck & have fun!
