Cucumber recipe.....?

Somebody out there have the recipe for cucumber dip? Also I will like to know in what kind of hot dishes I can add cucumber.

    Hello My Friend,

    Well my favourite Cucumber dip is a mediterranean style used on a Gyro sandwich, which consists of :

    *** Keefer Cheese or Greek Yogurt

    *** 1-Cucumber (chopped)

    *** 3-Garlic cloves (chopped)

    *** 2 tsp. Fresh Lime Juice

    *** 1/4 tsp. Ground Pepper

    *** 1/4 tsp. Sea Salt (fine ground)

    Mix together and refrigerate

    at least 30 minutes or longer

    for best taste.

    :::: I make a sandwich of thin sliced Lamb pan fried, put into Pita Bread with Cucumber dip add tomatoes, lettuce and sliced cucumber

    This is more of a salad than a dip. Try this, peel and slice 1 cucumber;slice 1 onion in thin slices; add about 1 cup sour cream;salt and pepper to taste. Keep in the fridge for an hour or so then serve.

    Cucumber && Yogurt Dip

    1/2 pound cucumber (roughly 1 medium)

    1 cup plain yogurt

    1 small garlic clove, minced

    1/3 cup finely chopped fresh mint leaves

    Salt to taste

    Peel and seed the cucumbers. Using the large holes on a box grater, grate the cucumber into a small bowl. A handful at a time (kids like doing this), gently squeeze the water out of the grated cucumber. (More than half a cucumber's weight is water.) Return the cucumber to the bowl and stir in the yogurt, garlic, mint, and salt.

    Crazy Cucumber Dip (:

    This dip is robust and oh-so-good. It tastes best with raw vegetables or crackers. Or try it with hot mozzarella sticks.

    1 medium cucumber, peeled, halved lengthwise, seeded and cut into 1-inch pieces.

    1/4 cup chopped fresh parsley

    1 medium scallion, thinly sliced

    1/4 cup plain yogurt

    2 tbsp fresh lemon juice

    1 garlic clove, crushed

    1. Process all the ingredients in a food processor or blender until creamy and smooth.

    2. Transfer dip to a bowl and cover with plastic wrap.

    3. Store in refrigerator for at least 10 minutes before serving.

    Makes 2 to 4 servings

    Hot Cucumbers in Cream Sauce

    Ingredients:

    1 large garlic clove, minced

    1 T olive oil

    2 cucumbers (approx. 1 lb), peeled, seeded, and cut into 2" strips

    1 T white wine vinegar

    2 T heavy cream

    1 1/2 T snipped fresh dill

    Directions:

    In a heave skillet, cook garlic in oil over low heat, stirring, until it begins to color. Add cucumbers and cook over medium heat, stirring, until cucumbers are tender and wilted. Stir in vinegar and cream and cook, stirring, for 3 minutes or until thickened slightly. Remove from heat and stir in dill, and salt & pepper to taste.

    1 (8 ounce) package cream cheese, softened

    2 cucumbers - peeled, seeded and chopped

    1 cup mayonnaise

    1 tablespoon fresh lemon juice

    1/2 teaspoon dried dill weed

    1/2 teaspoon hot pepper sauce

    Place cream cheese in a medium bowl. Beat until smooth. Stir in cucumbers, mayonnaise, fresh lemon juice, dill weed and hot pepper sauce. serves 24

    You can also make Tzatziki Sauce (Yogurt and Cucumber Dip) ...

    and of course you can use cucumber for salads, salsa...

    or even for makisushi..

    you can use it in sandwiches or burgers..

    Cucumber dip

    1 cucumber, peeled, seeded & diced

    1/2 C sour cream

    2 TB green onions, chopped

    1 clove garlic, minced

    2 TB fresh dill, chopped

    1 ts lemon juice

    salt & pepper to taste

    Combine all & mix well. Chill & serve. serve with crackers.
