    Hello, Alliete

To prepare Couscous, you basicly boil water add Couscous and turn the heat off. Easy huh ! I actually like it just with butter as a side dish for Chicken , Fish. It's very delicate and goes well with soft things. It is also used in Middle Eastern foods such as "Toboullie" which is Chopped Parsley, Chopped onion, Chopped Tomato, Chopped Garlic, Olive oil, Lemon Juice and Couscous. It's a tasty salad.

Finely Chopped Walnuts, Raisins and Couscous is like a stuffing"GOOD"

    Warm Chicken and Couscous Salad

    1 tbls olive oil

12 oz chicken tenders or boneless, skinless chicken cut into strips

2 tsp Cajun or blackened seasoning

    1 tsp minced garlic

1 can (about 14oz) chicken broth

2 cups frozen broccoli, carrot, and red bell pepper blend

    1 cup uncooked couscous

3 cups packed torn spinach leaves

    1/4 cup poppy seed dressing

    1. Heat oil in large nonstick skillet over medium-high heat. Toss chicken with Cajun seasoning. Add chicken and garlic to skillet; cook and stir 3 minutes or until chicken is cooked through.

    2. Add broth and mixed vegetable to skillet; bring to a boil. Stir in couscous. Remove from heat. Cover; let stand 5 minutes. Stir in spinach; transfer to plates. Drizzle with dressing.

I use less spinach than directed and omit the poppy seed dressing. But make it however you want. I hope you like it!

I like to follow the pkg. directions for couscous, and yeah, it is that easy. boil the water, turn it off, add the couscous, cover it, then fluff w/a fork 5 min's later. I love this recipe:

1 box couscous (about 8ozs.) cooked & cooled

a couple of chopped scallions (green onions)

1 16 oz. can garbanzo beans, (chick peas) rinsed and drained

1 sm. container feta cheese (abou 3 ozs.)

1 sm. can (about 2 oz) chopped black olives

mix with Italian dressing, chill & serve....so good!
