my tank cycling seems to have plateaued?

It is a 40g tank in about its 5th week of cycling, at the moment I have one red eye tetra and two snails in it and they seem pretty happy and healthy. I am feeding small amount once a day with flakes. I don't really want to add chemicals to 'help' the cycle along, I have my temp slightly higher tho not too high for the fish. No water changes. I am thinking about adding a zebra danio tomorrow.

What do you think? Here's my readings for the last week (ammonia/nitrite/nitrate)

Update:

Thanks fishfan, the reason I have the fish in my tank is firstly because it was bullying another red tetra in a different tank. Also, I thought it would be hardy enough for cycling and it is doing very well for now. I am getting some plants tomorrow.

    I wouldn't suggest keeping anything in your tank right now. Your ammonia is 1 ppm, and your nitrite is 2 ppm. These are deadly to living things, and it will take a very hardy fish to withstand such ammonia levels. Your nitrate is okay. If you want to reduce ammonia, you could add some plants. They actually prefer to use ammonia over nitrate.

    Also be aware that the fish you want do best in groups of atleast five
