Choir/amateur orchestra/ singing group at University ?

I am a senior at my university which is focused mainly on the medical field, but recently I had an idea of trying to start an amateur orchestra, choir maybe...all depending on how many students would join.

 Almost every other student seems to proficiently play an instrument or sing, so I thought it might be nice if we could organize some type of music group.I actually know several music conductors, so that would be helpful. Do you recommend anything?

    A close family friend, Christopher Martin, was the conductor of a huge orchestra in Australia, all the musicians being doctors and surgeons.  They'd all meet up regularly for concerts and even world-wide tours.
