When adding chicken feet to a broth will it become more jelly like?

    Yes it will. The gel will be more pronounced after reducing the broth by at least half.

    Chicken feet are mostly bones, tendons, toenails, and skin.

    Yes, but if simmered long and slow. Chicken feet are nearly ALL collagen.

    That is correct the feet have more collagen that just about any part of the chicken.
