Can one person use a triple kayak? ?

Now I was planning to buy a on top kayak soon. 

One I could sit on top rather the inside. I have used one in the past. I used a two person kayak with another person with me a few times. I wanted to buy one personally for myself but I didn’t want a one person Kayak due to the fact I have a big family and I know others would like to use it. I was going to get a two person version but knew if I sat in the front or back on my own it would be hard to steer when going around a bend. So after thinking I was thinking to get a three person Kayak (triple kayak) so that I could sit in the middle part on my own or I could use it as two or three. Would it be practical? Is it easy to use it on your own in the middle. 

I’ve been told being in the middle is the best option when on your own.
