Do you think I can use kefir to replace heavy cream?

I'm going to make ice cream and I know that the recipes call for heavy cream. Do you think kefir has the same consistency as heavy cream? Will using kefir change the consistency of the end product?

    I guess kefir does have similar consistency to cream. I'm not entirely sure it would work in ice cream, though - not sure what happens to it when it's frozen (eg. might separate, or freeze unevenly, or go lumpy). That said, kefir is similar to yoghurt, so you might end up with something more akin to frozen yoghurt rather than ice cream (which is made from a custard base). Worth a try, probably?!

    Kefir has a very low fat content. It won't work in ice cream. For ice cream you need heavy cream and whole milk.

    No, kefir is a yogurt. It is not as smooth as heavy cream and it is sour/tangy tasting. Heavy cream is sweet and smooth and is often used in coffee. If you were to put kefir in coffee, it would curdle and separate. So, no, they are not similar. Good luck.
