    Its the round formation at the center of a ribeye steak.

    It's the loin meat attached to the rib. If you took a slab of rib meat with the loin attached, it would look like a meat hatchet with the rib being the handle and the loin cut or rib "eye" being the blade. Remove the bone and you're left with a rib eye steak. These are especially fatty, but very delicious and tender.
