Vegetarians, what did you cook for your Christmas lunch or dinner this year?
I added a few ingredients to this nut bake and it was really lovely. Still eating it and it is great cold too.
Cashew Nut and Vegie Roast
Robyn’s variation on an oldie
*1 medium raw carrot *1 med potato raw
*1 cup cashews *1 cup sunflower seeds
1 chopped onion 1 tsp salt
3 T parsley 3 eggs, beaten
2 T oil 1 T soya sauce
1 tsp or more ground cumin
Mince the first 4 * ingredients. I grated the veggies and then chopped the cashews and ground the sunflower seeds in the pestle.
We adore cumin, buy it as seeds and then grind in pestle, much more flavor – really worth it.
Combine all ingredients and bake for an hour in moderate oven. Serve with gravy. Is great hot or cold.

Saftey Pin - try the family dinner, it is great fun. Do it for some friends. I had great fun setting the table - even wrapped all the framed pics on the walls in Christmas paper just like gifts, looked good.
Sheila, thanks for the link, yes will try some of these. If you roast is too crumbly, I would add Deb mashed potato powder (is that vegan? I didn't look).

I made the vegan nut roast number 2 from this link http://vnv.org.au/site/index.php?option=com_conten... Really easy and delicious; we're still eating it cold. I foolishly made a double batch but we've almost finished it now. The only problem is that it turned out a bit crumbly - I don't think I ground the nuts up finely enough. But no complaints about the flavour. We had it cold with salads, about the same time that Melbourne was being bombarded by horrendous hail storms. Very memorable Christmas meal!

I had:
stuffing - was not cooking in a turkey and made with veggie broth, mushrooms, onions, celery, and we throw craisins in there.
Fresh green beans pressure cooked
Baked new potatoes
Broccoli, mushrooms, onions cooked together
Baked butternut squash with a brown sugar topping
Rolls
I tried Julie Hasson's mini pumpkin pies from everydaydish.tv's cooking show and really like them.
I didn't have a meat substitute because I'm the only one in my family that doesn't eat meat. Next year, I may try one though! Your recipe looks really good!
There's a mock turkey roast recipe on everydaydish.tv too that I thought I could try as well. The only problem is it uses a lot of vital wheat gluten and frankly, I am not having success with the recipes that I use VWG in. It comes out stringy and the texture like it hasn't been cooked all the way. So your recipe is like music to my ears right now, simply because I don't see that one pesky ingredient, lol!

We made tamales, both vegetarian and vegan. We simmered roasted local squash with mushrooms and vegan pasta sauce for the main filling. Some just got the filling, some got the filling with Daiya cheddar cheese, and some got the filling with dairy cheese (the masa for those was colored bright yellow so the vegans wouldn't accidentally eat them). There were dessert tamales, too -- I think the filling for those was apples cooked down with cinnamon and other dessert spices, but I'm not sure, I didn't eat any, having recently discovered I've developed an allergy to apples :(
And tonight we're making vegan stromboli from the rest of the roasted squash!

Marinated carrots! I got the recipe from a friend and they are to die for. I went to my Aunt's house for a big brunch, it's our family tradition, and also ate some hash brown casserole and eggs benedict (minus the bacon/ham, she put out a few with just egg and sauce, it was so sweet of her) and some chocolate dipped strawberries because she had a chocolate fountain set up. Later on that night I had some Au Naturel "meat" balls with spaghetti and tomato sauce.

I don't celebrate xmas and I'd had a tooth out on thursday so I sipped lentil soup through a straw :(
It was a really awful day, not because of the soreness nor the xmasness but because it hailed FIVE TIMES during the afternoon and I kept staring out the window looking at my car which was not undercover as it got pounded with ice. There is one big dent and many many scratches on the roof, thankyou baby jesus.

I had mashed potatoes and raw carrots lol. We eat Xmas dinner at my MILs house every year, and she doesn't quite grasp the concept of vegetarianism. My husbands youngest brother used to make vegan stuffing and vegetarian green bean casserole every year (which was what I always ate), but he recently moved away. I didnt think to bring something for myself to eat, since he usually makes 2 delicious dishes I eat, and figured my MIl would do the same. My MIL didn't make the green bean casserole, and added chicken stock to the stuffing :-(. Worse, she got upset because I didn't eat the game hens she cooked. Apparently in her mind, since they weren't chicken, beef or pork, they didn't count as meat. I will keep this in mind for the future, since my BIL isn't going to be able to afford to visit for holidays anytime soon.
Christmas breakfast at my parents was nice though. We had scrambled eggs, homemade breakfast rolls, my mom and I had homemade lentil rice patties (substitute for sausage), and my dad and husband had elk sausage. Everyone got a good meal.

My mom made me tofurky. It wasn't bad actually. We also had a sweet potato bake with a streusel topping, braised collard greens, and I made a vegan gravy. And plenty of pie. I made a raspberry crostata, a recipe from vegweb called PMS pie, and my mom made a sweet potato pie. Everything was delicious!

I went out to an early dinner with friends and I made some mint patties and chocolate dipped strawberries for desserts which we came back to the house to enjoy with bubbling sweet wine. It was nice.

As the only veggie my mum offered me a choice. I wanted a veggie burger with american cheese and ketchup in a bun lol
