Wedding finger foods?

Hey guys, my sister is having a small family reception for her wedding and I was wondering if anyone had any ideas about elegant-yet-simple wedding finger foods? Thanks! :)

    * Mini quiches - this can be bought in the frozen section of the supermarket or BJ's or Costco, etc...

    * Spanakopita - phyllo dough stuffed with spinach and feta

    * Mini rolls with sliced roast beef and horseradish

    * Stuffed mushrooms

    * Bacon wrapped shrimp or scallops

    * Chicken or beef satay

    * Mini crab cakes

    * Lamb chops

    * Potato pancakes

    * Clams casino

    * Spring rolls

    You can also set up a cheese board with assorted cheeses and sliced meats like prosciutto and salami with crackers, as well as, a pasta station.

    We are doing the exact same thing for our wedding in less than 5 weeks!! This is what we are having...... Antipasto platters, dolmades, olives etc Cheese platters with crackers bread sticks vol au vont shells filled with chicken and asparagus cheese sauce ( the shells can be bought and the sauce made a day ahead then just fill and heat) mini chicken drumsticks done in a plum sauce, and some in bbq sauce ( cooked on the bbq a day ahead then reheated in the microwave) a platter of cold cut meats, including cut up bbq chicken tiny spicy meatballs on toothpicks with a chilli dipping sauce fetta and spinach triangles little pitta bread pinwheels (not sure what they are called, use a flat bread, fill with cream cheese, ham and whatever topping you prefer then roll up and sice into bite size pieces) Mini quiches two platters of sushi rolls bruchetta I think that is everything. We are also serving dessert. wedding cake, 2 pavlovas, brandy snaps and 2 cheesecakes, huge bucket of strawberries and a chocolate fountain. I hope I have enough to please everyone, it is giving me nightmares. I really wanted to do this and I have lots of help but you still worry about running out of food etc etc. What do you think? Hope I have added to your ideas somewhat. Good luck with your planning. It is fun, even tho it is stressfull.

    A selection of sliced breads, breadsticks, or rolls

    Fondue stations or chocolate fountains for dipping

    Deli trays with assorted meats and cheeses

    Small snacks such as pillow mints, chocolate candies, or nuts

    Wings, either with a hot buffalo glaze, barbeque sauce, or other favorite flavor

    Popcorn chicken or popcorn shrimp

    Meatballs

    Dainty sandwiches

    Devilled eggs

    Stuffed Celery

    Mini Kabobs - just three items on a toothpick. You can choose from a wide variety: cheese cubes, green olives, bacon, cubes of cooked meat, fruits and vegetables. Green olives with a cube of cheese and bacon are a tasty favorite.

    Vegetable Crudités

    Satay Chicken Skewers

    Chipolata Sausages

    Miniature Hamburger / Hotdogs

    Grilled Asparagus spear parcels in prosciutto

    If there is going to be young ones there, Elf Hammers. Not elegant but very simple. Pretzel sicks stuck into a small cubes of cheese.

    Mini quickes are a good idea/

    As well as spinach stufed inside of phyllo dough, you can by these or make them. They have an official name.

    Deviled eggs with shrimp on top to class them.

    New potatoes, baked, cut int 1/2 and file with potato salad or even twice baked.

    These are all good:

    Ham and Broccoli cups:

    10oz forzen broccoli, thawed and chopped

    4 oz cream cheese (I used onion and chive but you could use plain)

    1 tbsp parmesan cheese

    1 tsp garlic powder

    1/4 cup chopped sun dried tomatoes (not backed in oil, the ones that are in a bag)

    1/2 cup chopped smoked almonds

    24-48 slices ham

    Mix everything except the almonds and ham. Lay a slice of ham in a mini cup cake pan or regular depending on what size you want.

    Sprinkle the almonds on the top and bake for about 10-15 minutes. They are so simple, quick and yummy!!!

    Wrapped Stuffed Dates:

    16 Large Whole Dates

    3 oz Soft Chevre (Goat Cheese) or Cream Cheese Softened

    1 Tbsp Chopped Toasted Almonds

    1 Can (8 oz) Refrigerated Crescent Rolls

    Glaze:

    ½ Cup Powdered Sugar

    ½ Tsp Grated Orange Peel

    1 Tbsp Orange Juice

    1.Cut each date in ½ longwise and remove pit. Place cheese of choice and nuts in zipper top bag. Mash together. Snip tip and fill each date ½ with cheese mix.

    2.Heat oven to 375, unroll crescent rolls and separate in 4 Rectangles. Pinch together the seams. Cut each rectangle into 4 even strips. Wrap each stuffed date with 1 strip dough, and pinch edge closed. Place seam side down on un-greased baking sheet.

    3.Bake 10-15 minutes, or until the dough is golden brown. Meanwhile in a small bowl mix glaze ingredients and immediately drizzle glaze over hot wrapped dates. Remove from baking sheet cool slightly and serve warm.

    Easy Herb And Beef Bites:

    10 Thin Slices Sandwich Beef (4 in Diameter)

    ¼ Cup Garlic Herb Cream Cheese

    ¼ Cup Finely Chopped Red Bell Pepper

    2 Cucumbers-Unpeeled and sliced into 20 Slices Each

    1.Unroll beef and lay flat. Spread with approx 1 tsp of cream cheese and sprinkled with 1 tsp bell pepper. Carefully roll beef up.

    2.Cut each roll into 4 slices. Place on top of cucumber slices. Serve.

    The little mini quiches that you can buy in the freezer section of the store are nice. I think you can find them at Sam's Club too, if you have a membership there.
