    It can change but my always favourite is stuffed fat mushrooms with green tomatoes and goat cheese.

    Get huge fat big portobello mushrooms and take the stem out.

    Add oil to a pan and add minced garlic, and some pine nuts.

    Stiry fry a few mintues.

    Add the mushrooms - maybe two to a pan if they are very big.

    Fry on both sides for about four minutes to get the mushrooms cooked outside.

    Add soysauce to the liquid in the pan, and any time it starts to dry out, or a few drops more oil.

    Add sliced green tomatoes ( can use very frim tomatilloes) to the pan, and keep sauteeing til the toms start to soften but NOT get mushy.

    Add chopped green onion, and a few more drops of soysauce.

    The tomatoes should be cooked and softend but not slushy.

    Pile the veg and pine nuts and everything into the holes of the mushrooms, and top with a dollop of goat cheese ( can use cream cheese or even cottage cheese).

    Add a few more pine nuts to the top of the cheese and transfer the pan to a hot oven.

    Bake for ten minutes til the cheese is starting to melt out.

    Serve on top of a piece of freshly toasted wholewheat bread.

    Bugogi – Korean Beef Dish

    Ingredients

    1 lb beef tenderloin, sliced very

    – thin

    2 cloves fresh garlic, crushed

    2 tb granulated sugar

    1 tb sesame oil

    1 black pepper good sprinkling

    1 roasted sesame seeds (also a

    – good s; prinkling)

    1 green onion, finely chopped

    2 tb soy sauce

    3 tb water

    Instructions

    In a glass or plastic bowl, mix everything together. Cover and refrigerate for 1-day. (You can cook immediately, but of course, it won’t taste as good.

    In a skillet, heat a tablespoon of vegetable oil over medium-high to high heat. Cook the beef slices, turning until meat reaches desired degree of doneness (about 1-2 minutes).

    Serve with rice and green vegetables.
