Question about pimento cheese?

I read an article about pimento cheese and now I am craving it. I have shredded cheddar cheese and mayo, but I don't have any pimentos on hand. Can I make it with a red bell pepper?

    Sure you can. Just steam a red bell pepper until it's tender. Then put it in a bowl with plastic wrap to steam further to help remove the peel. Then peel and finely dice the pepper.

    Yes , you can make it with red bell pepper.

    As you can see it will not be exactly the same, But Good.
