How do you make the marinated/pickled veggies that are at Taquerias?

I would like to be able to make the stuff that is in the salsa bar at taquerias. It has carrots, onions, peppers in it, and it is all either pickled or marinated.

    I have made this. I think I found the recipe in a cookbook called "Cocina de la Familia."

    I think I sliced the carrots into thick diagonal slices, sliced the onions, either sliced the peppers or left them whole but put a slash in them, put the veggies in a heatproof bowl, and then heated up some white vinegar till it was about boiling, and poured the vinegar over. Then I let it cool, and put it in the fridge.

    That's how I would do it if I had no recipe and found myself craving those pickled carrots from the taqueria.

    Hot Giardiniera

    1 large yellow onion, sliced

    1 large clove garlic, sliced thin

    2 carrots, peeled and sliced diagonally

    1 celery stalk, sliced diagonally

    2 cups cauliflower, cut into small chunks

    1/2 red pepper, quartered and sliced

    1/4 cup banana peppers or other mild/hot peppers to taste

    1 cup olive oil

    2 teaspoons salt

    1 teaspoon pepper

    Combine everything and let marinate for 2 days in fridge.
